Carrot and Ginger Soup Recipe
The best thing to do about preparing this soup is to purée it so that it becomes smooth. You can use an upright blender for this. If you have an immersion blender you will have to work until the soup is as smooth as it can be. This recipe will include chicken stock, however, if you are a vegetarian you can use vegetable stock.
- 3 tbsp unsalted butter
- 1 1/2 pounds carrots (6-7 large carrots), peeled and sliced thin
- 2 cups chopped white or yellow onion
- 1 teaspoon minced ginger
- 2 cups chicken stock or vegetable stock
- 2 cups water
- 3 large strips of zest from an orange
- Chopped chives, parsley, dill or fennel for garnish
First, you will need to sauté the onions and carrots. Just melt the butter in a soup pot over medium heat and cook the onions and the carrot, while you stir from time to time until the onions soften. This should take 5-8 minutes. Make sure you do not let the onions or carrots turn brown. Just sprinkle a teaspoon of salt over the carrots and onions while they are cooking.
Then, you should add some water, ginger, and strips of orange zest. Let it simmer while it is covered and cook it until the carrots are soft. This should take you approximately 20 minutes.
Next, remove the strips of orange zest and throw them away.
When you do this, you should pour the soup in a blender and purée it until it becomes smooth. Make sure you fill a third of the blender bowl with the liquid and keep one hand pressing down the cap of the blender so it does not pop off.
